Lime and Malibu Barramundi
Quick and easy. Delicious. Fillets can be served whole or in bite-sized portions.
INGREDIENTS
Juice of 1 Lime
2 Barramundi fillets
1 medium carrot
1 onion
2 sprigs of coriander
1/2 nip of Malibu
Salt and Pepper
Seasoned flour
Olive Oil
Shredded Coconut
METHOD
Coat fish in seasoned flour, fry in olive oil. Remove when cooked.
Lightly fry onion, carrot and coriander in fish pan. Remove when cooked.
Deglaze pan with Malibu and lime juice. Add vegetables.
Place fillets on plates, and top with vegetables.
garnish with shredded coconut and coriander.
